Nonstick pans are usually thought of negatively: chemicals, one-trick ponies, and throwaway tools. However, did you know that most nonstick pans are oven-safe? Some can even be broiler-safe! Fortunately, most nonstick pans no longer contain Polytetrafluoroethylene (PFOA), commonly known as Teflon. 

With all that in mind, we have decided to put the top brands to the test to figure out what were the best non-stick pans in 2022. So, you can take the guesswork out of deciding what pans to get to complete your kitchen based on your specific needs.

So, What Are the Different Types of Nonstick Coatings? 

There are three main types of nonstick coatings generally spoken about for pans. These are Regular Nonstick Pans, Ceramic Nonstick Pans, and Carbon Steel Pans. Let’s take a closer look at each of these coating types.

  • Regular Nonstick Pans

In the 1930s, DuPont scientists developed a tough, flexible compound called polytetrafluoroethylene (PTFE). This has, over the subsequent years, become the main ingredient in the coating used for regular nonstick pans. They are incredibly user-friendly and superslick when they are brand new. 

These coatings, however, wear away over time. These nonstick cookwares have also raised concerns about their safety. When heated above 500 degrees F, PTFE can degrade and release toxic fumes, despite its chemical inertness. 

  • Ceramic Nonstick Pans

This pan’s nonstick properties are derived from beach sand, rather than PTFE. Due to the fragility of their nonstick surfaces, they are prone to developing microscopic cracks that can cause food to stick. 

However, their coatings do not release harmful fumes even at high temperatures. Nonstick cookware won’t last forever, just like other cookware. They will gradually lose their nonstick properties with use and will eventually need to be replaced. 

  • Carbon-Steel Pans

Carbon-steel skillets aren’t coated with synthetic coatings like nonstick skillets and ceramic nonstick skillets. To make them nonstick, they must be seasoned (which is fairly quick and easy with our preferred method), and unlike with the others, the seasoning used on these pans will improve with time.

Foods that are acidic and heavy scrubbing with soap can remove that seasoning, but it is completely restorable if damaged. Maintaining this style of pan takes time and effort, but it’s a one-time investment that will last a lifetime. 

How and What We Tested? 

To test the effectiveness of the different pans, we first did a water test on all five to estimate how long they took to come to the perfect temperature for oil or cooking.

To do this we dropped a teaspoon of water into the heated pans to see the effect it had. If the water formed in what looked like a mercury ball and slid around that meant the pan was at the perfect temperature to cook and if the water splattered into multiple smaller balls, that told us the pan was too hot and needed to be removed from the heat a bit before cooking. Then I set 200g of water on to boil in each to see which would heat and boil the fastest.

Next, to determine whether the bottoms of our protein would brown evenly, we seared slices of boneless and skinless chicken breasts. We then evaluated how long each pan took to cook them fully and how easy they were to flip or move around in the pan. 

After the protein war, we moved on to the world of breakfast foods, preparing fried eggs with fat to see if they would stick to the pan and break or if they were easy to slide around or flip. We then moved on to scrambling eggs again without the addition of butter and oil to see if the result would just be a blob of eggs or fluffy and easy to remove from the pan. To close out the breakfast tests, we cooked a batch of crepes in all 5 pans to see how easy they were to flip and how quickly they cooked.

Additionally, we considered how fast the pans heated up and cooled down, and how easy it was to clean them.

Boiling Water

The Blue Diamond pan took a whole 2 minutes and 8 seconds to bring the water to a boil, telling us that it had better heat distribution than the Anolon but was still not the faster compared to other pans we tested.

Cooking Eggs

Flipping fried eggs was easy, thanks to the Blue Dimond’s wide-angle curves. The scrambled eggs also came out great. We were able to easily fold and stir the eggs without having them stick using a plastic heat-resistant spatula.

Cooking Chicken Breasts

Our final preparation was skinless chicken breasts. In this case, we noticed a significant difference in the performance of the nonstick surface. Without oil, the chicken breast stuck to the pan and dried out fairly quickly. However, the cook on the chicken breast was gorgeous and was able to move around easily after lightly rubbing them in oil.

Boiling Water

The Hexclad Pan took longer than the Blue Diamond but boiled the water a bit quicker than the  Anolon at 2 minutes and 20 seconds.

Cooking Eggs

This was a mess. The eggs stuck to the pan leaving residue when attempting to both fry and scramble the eggs without oil. After lightly greasing the pan with oil/butter as you would a cast-iron skillet the eggs cooked beautifully.

Cooking Chicken Breasts

On the chicken breasts, we like to get a more intense seal we get from the Hexclad than what we would achieve at lower heat in a normal pan. Please be aware of some of the Hexclad videos available on the Internet. A sear like that can only be achieved with high heat, something that is best suited to cast iron, carbon steel, or heavy clad stainless. The high flame can be seen under the pan in some of the videos if you look closely.

Downsides of The Hexclad Pan

  • Very Expensive 

HexClad’s biggest flaw is its price. It is hard for many people to spend this much money on a single pan. It is inevitable that the non-stick material in the pan will deteriorate at some point, even with stainless steel protection.

  • Not Suitable for Searing

Searing with it is not the best choice. Cast iron or stainless steel are better. Even so, it is better than conventional nonstick. During searing, the meat should sit flat so that the crust is able to form. This is not possible due to the stainless and non-stick coatings.

  • Food Still Sticks To The Pan

Home chefs report this as the second most common complaint, second only to its price. The stainless steel component causes the sticking. Keep the pan very clean, avoid high heat, and season it periodically to achieve the best results. You can think of it as stainless steel.

Boiling Water

Though not recommended for testing purposes we boiled the same amount of water in the Greenpan pan. The water came to a near boil by about the 2-minute mark, which was the fastest among all the pans.

Word of Caution: You should take some extra precautions when boiling water in a GreenPan. Cookware from this company should not be placed on high heat right away as it will damage it. You should also take care not to let any water boil dry in any GreenPan cookware.

Cooking Eggs

As with the other pans, frying the eggs were effortless. They moved around easily and flipped without pain. The Greenpan pan actually scrambled eggs better than the more expensive Hexclad when using minimal oil. In the end, there was less egg residue on the pan, and anything that was stuck to the pan could be scrubbed off with a damp paper towel or rag.

Cooking Chicken Breasts

Using olive oil and seasonings, I marinated a chicken breast with a few colored peppers. In order for the Thermolon to distribute heat evenly throughout the pan, the manufacturer recommends cooking on low to medium heat. The chicken came out perfectly cooked. I also had no trouble turning it.

The ceramic coating of GreenPan doesn’t last as long as a high-quality traditional (PTFE) nonstick coating, according to some chefs. As a result of my testing, I have found that GreenPan’s coating lasts longer than most ceramics, but slightly less than PTFE.

The Anolon pan took a whole 2 minutes and 32 seconds to bring the water to a boil, which is a bit slow when compared to other pans in its price range. But, could be due to its slightly thicker exterior. 

  • Cooking Eggs

Eggs were the starting point. First, we fried an egg in the skillet, then scrambled it in the same pan. I was able to easily remove the fried eggs from all the frying pans. When scrambling eggs, however, we found that grooves and dimples in pans with textured surfaces often collected food particles. Cleaning the grooved skillets required some effort.

  • Cooking Chicken Breasts

Without oil, the chicken breasts cooked in just about6 minutes per side and were easy to move around and flip. The result was juicy and tender chicken breast slices.

Even the best-selling Advanced collection from Anolon has a maximum oven temperature of 400°F. Silicone handles limit the heat tolerance of Anolon pans. Other high-selling brands can withstand temperatures up to 500°F.

  • Heat Retention

My tests confirmed that Anolon pans heat up quickly, but they do not retain heat as well as expected. You need to keep this in mind if you plan to frequently sear and slow cook. Good heat retention is necessary for both of these techniques.

  • Size of the Cooking Surface

One complaint from many reviewers is the surface area of the pans. Anolon pans are not 10 inches wide; their width is determined by their diameter around the top. There is often a gap of 2 inches between the pan’s surface and its advertised size.

  • Long Term Non-Stick Durability

The cooking surface of Anolon (and most non-stick cookware) is prone to scratching, wear, and food sticking. Anolon is not indestructible despite its high-quality materials. The product will last between three and five years.

The Calphalon pan took a whole 2 minutes and 40 seconds to bring the water to a rolling boil, which was the longest time among all the pans. Which told us it took the longest to distribute heat across the base of the pan when compared to the others.

Cooking Eggs

Calphalon’s pan heats up quickly, distributes heat evenly on the pan’s surface, and holds heat well. This made cooking our eggs a breeze. The fried eggs were able to slide around and flip easily without the addition of fat, and the scrambled eggs were fluffy and released well.

Cooking Chicken Breasts

The Calphalon pan held its own in the chicken breast test. Again we marinated the chicken breast in oil and seasoning to give it the best shot of remaining juicy. Then cooked them without the addition of oil, the chicken breasts cooked through in about 12 minutes flipping halfway.

Our eggs, for example, had only a few flakes of debris on it when we cleaned them after making eggs. As opposed to previously non-stick pans that left about half of the eggs crusted at the bottom, this was a breeze. 

Downsides of Calphalon Pan

  • Durability of Nonstick Surfaces

If you use utensils like forks and knives, be careful with non-stick Calphalon collections. Over-pressing will scratch the non-stick coating. With a wire whisk or spatula, you may be able to get by, but for greater longevity, use non-abrasive tools like wood or heat-resistant silicone.

  • Construction

The thick walls of Calphalon cookware increase heat retention but increase weight as well. Moreover, since they are thick, it takes longer for them to heat up.

  • Low Oven-Safe Temperature

Calphalon does not offer cookware capable of handling 600°F or higher. Its maximum oven-safe temperature ranges from 450°F to 500°F, depending on the collection.

Concerns Regarding Maintenance

A common complaint on amazon was that the pans weren’t as durable as advertised. Many stated that the pans had dents or scratches after their first use/wash. Nonstick cookware made of hard-anodized aluminum stains easily at the bottom. Even after minimal use, stains get baked in.

Care and maintenance

It’s no secret that nonstick pans’ coatings are delicate. Follow these guidelines based on the brand you choose to prolong the life of your pan:

  • Anolon

It is true that Anolon Authority can be washed in the dishwasher. The nonstick properties of the material won’t be affected. In addition, unlike many anodized aluminum pans, it won’t discolor after washing in a dishwasher. When hand washing, you will find the exterior surface much easier to clean than shiny stainless steel.

  • Blue Diamond 

All of Blue Diamond’s marketing materials claim their pans can be washed in the dishwasher. Nevertheless, the cookware sets’ instruction booklet stipulates that pots and pans should only be hand washed. Because of this conflict, many people have damaged their cookware. To be on the safe side, we recommend hand washing your pots and pans. A bit of hot water and soap is all that is needed to give it a good clean, and there is no need for hard scrubbing.

The nonstick coating on these cookware sets can be damaged over time if they are washed in the dishwasher. Since these pans release food easily, cleaning them usually only requires wiping them with a soft cloth. Remove any microscopic food remnants from the cooking surface once per month by using a non-abrasive cleaner like Bar Keeper’s Friend. You should be able to use your cookware for years to come if you take good care of it.

  • Hexclad

My eggs were made without oil on purpose. I scrubbed half of the HexClad frying pan with a steel-wool pad, and there were no scratches, no damage at all. The egg white did stick to the pan (whites will stick to any flat surface without oil or fat). I threw the pan in the dishwasher with the other dirty half. Both the inside and the outside of the pan are like new.

The following tips can help prevent scratching and chipping of the Thermolon coating on your GreenPan.  These “dos” and “don’ts” were created based on customer experiences described in GreenPan reviews.

Run it through the dishwasher.

If the pan is still hot, wash it with a soft sponge and warm water, and if it has cooled, wash it with cold water.

Make use of metal utensils.

Utensils should only be made of wood or silicon.

Use high heat

Set the heat to low to medium.

Mash potatoes with an electric hand mixer.

Instead of using oil, use water and put the lid on for steam.

Prepare starchy food 

Use a dry paper towel to remove all oils before washing.  Add water after wiping with a clean paper towel and dish soap.  Rinse well.

Leave burnt bits or oils sitting in the pan.

If your pan has stuck burnt food, fill it with hot water and let it sit for a few minutes.

Use abrasives.

Wash the pan after it has cooled completely.

Use, dry, or store them anywhere or with anything that can cause them to be scratched.

Make sure the pan is chip-free when buying it, as even a small chip can grow larger over time.

Use unrefined oils or sprays

Sunflower oil, peanut oil, avocado oil, or coconut oil are good choices.

  • Calphalon

They are dishwasher-safe as well as the lids they come with. These nonstick pots and pans are also easy to hand-wash since food doesn’t stick to them. As an example, we had only a few flakes of debris left after cleaning the pan after making scrambled eggs. The nonstick pan made cooking much easier compared to previous pans that left almost half of the eggs crusted to the bottom. These pans kept their shine even after multiple washes.

  • Does Anolon cookware have a good reputation?

In use, Anolon cookware is safe, provided you use low heat, do not use metal utensils, do not use aerosol cooking spray, and always hand wash. 

Unfortunately, the entire PTFE nonstick cookware industry is not well regulated, so toxic chemicals have been released into the environment since the 1950s (and it continues to do so today). All nonstick cookware made since 2015 is PFOA-free, including Anolon cookware. Unfortunately, the chemical replacements are equally toxic. 

  • Are Anolon cookware dishwasher safe?

There are some Anolon guides that will tell you that the Anolon pans are dishwasher safe and we have proven that much in our testing. However, if you want your cookware to last as long as possible, we recommend hand washing it. Dishwasher detergents have abrasive chemicals that break down nonstick coatings over time.

  • How oven-safe are HexClad pans?

HexClad pots and pans can be used in the oven up to 500 degrees Fahrenheit. The tempered glass lids can withstand temperatures up to 300°F in the oven.

  • How dishwasher-safe is Calphalon cookware?

Calphalon’s non-stick and cast iron cookware are dishwasher safe, but not the Simply Calphalon brand or Calphalon Select.

  • How Good Is the Blue Diamond Pan’s Heat Distribution?

Blue Diamond’s base is made of aluminum. Copper does not conduct heat as well as diamonds, according to the company. Although technically correct, the statement is inaccurate. Aluminium is the primary component and the main weight of the base. Due to its low sensitivity to temperature changes, it heats equally.

Even the most reliable copper cookware doesn’t get hotter than the pot. There may be a marginal benefit, but it is not the main factor affecting how quickly the pan heats.

  • Can I use GreenPan in the oven?

The temperature ratings for GreenPan cookware vary by collection, but all of it is oven-safe. There is a temperature range between 320°F and 600°F for the cookware, while 350°F to 600°F for the lids.
